  1. Heat the vegetable oil in a large skillet over medium heat.

  4. Now, add the chopped onion, bell pepper, celery, and garlic to the skillet. Sauté until they become tender.
  5. Return the cooked sausage and chicken to the skillet.
  6. Add the crushed tomatoes, chicken broth, Cajun seasoning, and rice. Stir well.
  7. Cover the skillet and simmer for about 20-25 minutes, or until the rice is cooked and the flavors meld together.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.
