Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water and set aside.
  2. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and liquid is absorbed.
  3. In a large mixing bowl, combine cooked quinoa, cherry tomatoes, mozzarella balls, fresh basil, minced garlic, balsamic vinegar, and olive oil. Toss everything together until well mixed. Season with salt and pepper to taste.
  4. Preheat your oven to 375°F (190°C).
  5. Stuff each bell pepper with the quinoa mixture and place them in a baking dish. Cover the dish with foil.
  6. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  7. Remove from the oven, garnish with additional fresh basil if desired, and serve hot.
