Ingredients

  • 1 block of firm tofu
  • 2 cups of broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup of snow peas
  • 3 cloves of garlic, minced
  • 2 tablespoons of sesame oil
  • 1/4 cup of low-sodium soy sauce
  • 2 tablespoons of hoisin sauce
  • 1 tablespoon of cornstarch
  • Cooked brown rice for serving
  • Sesame seeds and green onions for garnish

Instructions

  1. Press the tofu to remove excess water, then cut it into bite-sized cubes.
  2. In a small bowl, whisk together the soy sauce, hoisin sauce, and cornstarch to make the sauce.
  3. Heat 1 tablespoon of sesame oil in a large pan over medium-high heat. Add the tofu cubes and cook until they’re golden and crispy on all sides. Remove from the pan and set aside.
  4. In the same pan, add the remaining sesame oil and minced garlic. Stir-fry for about 30 seconds until fragrant.
  5. Add the broccoli, red bell pepper, carrot, and snow peas to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  6. Return the cooked tofu to the pan and pour the sauce over everything. Stir well to coat and cook for an additional 2-3 minutes until the sauce thickens.
  7. Serve the flavorful tofu stir-fry over cooked brown rice, garnished with sesame seeds and chopped green onions.
