  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 carrot, grated
  • 1/2 cup spinach, finely chopped

  • 1/4 cup yellow bell pepper, diced
  • 1/4 cup corn kernels
  • 1/4 cup grated cheddar cheese
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Cooking spray


  1. In a food processor, pulse the broccoli, cauliflower, and carrots until finely chopped.
  2. Transfer the chopped vegetables to a bowl and add the spinach, red bell pepper, yellow bell pepper, corn kernels, cheddar cheese, breadcrumbs, Parmesan cheese, egg, garlic powder, salt, and pepper.
