  • 4 large bell peppers, any color
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup diced tomatoes

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set them aside.
  3. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  4. In the same skillet, add the onions and cook until they become translucent.
  5. Add the diced tomatoes, corn, black beans, cooked rice, chili powder, cumin, salt, and pepper to the skillet. Stir well and cook for 5-7 minutes.
  6. Fill each bell pepper with the beef and rice mixture.
  7. Place the stuffed peppers in a baking dish and cover with aluminum foil.
  8. Bake for 25-30 minutes or until the peppers are tender.
  9. Remove from the oven, sprinkle shredded cheddar cheese on top of each pepper, and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
