Homemade Buttery Croissants

If you’ve ever dreamed of enjoying warm, flaky croissants fresh from your own oven, you’re in for a treat. Our Homemade Buttery Croissants recipe is a labor of love, but the results are worth every minute of effort.

  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/4 tsp salt
  • 1 cup unsalted butter, cold
  • 1/2 cup milk, cold
  • 1/4 cup water, cold

  1. In a large mixing bowl, combine the flour, sugar, yeast, and salt.
  2. Cut the cold butter into small cubes and add it to the dry ingredients. Mix until the butter is evenly distributed, but some small chunks remain.
  3. Gradually add the cold milk and water to the mixture, stirring until a shaggy dough forms.
  4. Turn the dough out onto a floured surface and knead it gently for about 5 minutes, or until it comes together smoothly.
  5. Wrap the dough in plastic wrap and refrigerate it for 1 hour.
  6. Roll out the dough into a rectangle, then fold it into thirds like a letter. Repeat this process three times, chilling the dough for 30 minutes between each fold.
  7. After the final fold, wrap the dough in plastic wrap and refrigerate it overnight.
  8. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  9. Cut the dough into triangles, then roll each one up from the wide end to the tip.
  10. Place the croissants on the baking sheet and let them rise for 30 minutes.
  11. Bake for 15-20 minutes, or until the croissants are golden brown and flaky.
