Instructions

  1. In a large Dutch oven or heavy-bottomed pot, heat some oil over medium-high heat. Add the andouille sausage and cook until browned. Remove and set aside.
  2. Add the diced chicken thighs to the pot and cook until browned and cooked through. Remove and set aside.
  3. In the same pot, add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are softened.
  4. Add the rice, diced tomatoes (with their juices), chicken broth, Cajun seasoning, dried thyme, bay leaf, and the cooked sausage and chicken back into the pot. Season with salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove the bay leaf, fluff the Jambalaya with a fork, and garnish with chopped fresh parsley.
