Your Kids Will Beg for More of These Veggie-Packed Nuggets!

Ingredients

  • 2 cups of broccoli florets
  • 1 carrot, finely grated
  • 1 cup of cauliflower florets
  • 1/2 cup of grated cheddar cheese
  • 1/4 cup of breadcrumbs
  • 1/4 cup of grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse the broccoli, cauliflower, and carrot until finely chopped.
  3. In a large bowl, combine the chopped veggies, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Form the mixture into nugget shapes and place them on the prepared baking sheet.
  5. Lightly spray the nuggets with cooking spray to help them brown.
  6. Bake in the preheated oven for 20-25 minutes, or until the nuggets are golden brown and crispy.
  7. Remove from the oven and let them cool slightly before serving.
